I’ve mentioned before that I come from a foodie family, and one of my favorite activities is cooking at my parent’s house. It’s a real treat to cook in a kitchen that’s almost as large as my one-bedroom apartment, and I love the chance to spend time with my mom. We baked Giada de Laurentiis’s recipe for coconut lace cookies, which looked and tasted awesome*. Both my boyfriend and my dad claim to dislike coconut, but they finished off the cookies in record time. If you like Samoa Girl Scout cookies, then you’ll love these.
Makes 12 cookies
* Be careful not to over-bake these. I only left them in the oven for 5 minutes.
